Peel the swede, the carrots and the potatoes.

Cut it into small pieces.

 

Place the pieces in a hot pan with olive oil and fresh coriander.

Add salt and pepper.

 

When the mixture becomes golden, add boiled water and leave to simmer.

 

When tender, blend it up.

 

Add a spoon of crème fraiche in your bowl and a coriander leaf.

1 swede

4 carrots

2 potatoes

Fresh coriander

Pasta dough (6 mini lasagnes)

Mix flour and spices.

Make a hole in the centre of the flour and add the eggs, salt, milk and olive oil.

Start to mix with a fork.

Put the pasta dough on the table with some flour.

Knead the dough.

Put the dough into the fridge, covered by a wet tea towel.

 

Ingredients


200g flour

2 eggs

1 tsp milk

1 tsp salt

1 tsp olive oil

2 pinches cumin

1 pinch coriander

1 pinch cinnamon

 

Filling

Chop the onion

Crush a clove of garlic

Put both into a pan with olive oil.

When the onion and garlic start to yellow, add the spices

 

Cut the aubergine into small pieces, along with the mushrooms and the tomato.

 

Add to the pan. Throw in salt & pepper. Let the mixture simmer and reduce



Ingredients


½ onion

2 clove garlic

1 aubergine

6 mushrooms

Fresh mint & coriander
1 tomato

1 tbs cumin

2 tbs coriander

2 tbs cinnamon

 

 

Get out the dough from the fridge.

Sprinkle some flour on the table and use a rolling pin to flatten the dough out.

Use metal rings to cut out round pieces of paste




Creating the lasagne

Arrange the metal rings on a plate.

Brush a little oil with your finger on the bottom of the ring to stop the lasagne from sticking.

Then place a first layer of dough into the rings.

 

Build your lasagne into the ring: 4 dough layers, 3 fillings.

 

Put them in the oven for 15 minutes at 140°.

 




Ideas :
Decorate the lasagne tops with cinnamon and half a small tomato

Eat with a fresh spinach salad.

Slice a swede up into small pieces and boil up in water.

When the pieces are soft, drain and mash up with a dash of milk.

Add salt and pepper.

Warm up to taste.

 

Slice an onion in two and then lengthways.

Heat olive oil in a hot pan. Add the onions and brown until caramelised.

Slice leeks in to short strips.

Add to the pan.

Add salt and pepper.

Leave the mixture to caramelise and reduce.

 

Sprinkle some smoked haddock fillets with sliced spring onions, a shallot, red pepper & hot chilli.

Wrap up the fish in individual parcels using tinfoil.

 

Place in a hot oven for 20 mins at 180°.

Hot chilli pepper

Cover the bottom of the pan with a thin layer of olive oil. Add the chopped springs onions and basmati rice to the pan.

Stir.

When the rice starts to become brown, add two glasses of water

Let the mixture cook slowly.

 

Chop an onion and put it in another pan with a bit of olive oil.

Cut the aubergine into small pieces.

Add the chopped carrots, mushrooms and tomato.

Allow the mixture to reduce.

Grate some cheese on the top and let it melt.

 

Warm some kazuki beans and mix with fromage frais

All some French parsley and some hot chilli powder

Allow the mixture to reduce.

 

 

Ingredients (for 4)


1 Spring onion

2 glasses Basmati rice

1 Onion

1 Aubergine

2 carrots

8 mushrooms

1 tomato

75g Gloucester cheese

100g kazuki beans

4 spoons fromage frais

3 pinches hot chili powder
