Slice a swede up into small pieces and boil up in water.
When the pieces are soft, drain and mash up with a dash of milk.
Add salt and pepper.
Warm up to taste.
Slice an onion in two and then lengthways.
Heat olive oil in a hot pan. Add the onions and brown until caramelised.
Slice leeks in to short strips.
Add to the pan.
Add salt and pepper.
Leave the mixture to caramelise and reduce.
Sprinkle some smoked haddock fillets with sliced spring onions, a shallot, red pepper
& hot chilli.
Wrap up the fish in individual parcels using tinfoil.
Place in a hot oven for 20 mins at 180°.
